Ingredients
  

Meatloaf
  • 1.5 lbs 80/20 ground beef
  • 1 large egg
  • 1/2 cup milk whole or buttermilk
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup plain dry breadcrumbs or panko, crushed Ritz crackers, quick oats, finely crushed cornflakes
  • 1/2 cup finely diced onion
  • 2 garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Glaze
  • 1/2 cup ketchup
  • 1 tablespoon Dijon or yellow mustard
  • 2 tablespoons brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line a baking sheet.
  2. In a large bowl, whisk together the egg, milk, and Worcestershire sauce.
  3. Stir in the diced onion, minced garlic, salt, and black pepper.
  4. Add the breadcrumbs and let them absorb the liquid.
  5. Add the ground beef and gently combine all ingredients without overmixing.
  6. Transfer the mixture to the pan, pressing gently, or shape into a loaf.
Glaze and Baking
  1. In a small bowl, whisk together ketchup, mustard, and brown sugar for the glaze and spread half of it over the meatloaf.
  2. Bake for 45 minutes.
  3. Remove, spread remaining glaze, and bake for another 15-20 minutes, until the internal temperature reaches 160°F (71°C).
Resting and Serving
  1. Let the meatloaf rest for 10-15 minutes before slicing and serving.

Notes

For best texture, avoid overmixing the meatloaf mixture. Letting it rest before slicing helps retain moisture and makes it easier to cut.
