  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh parsley chopped (for garnish, optional)

Cooking Steps
  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it up until it's browned and no longer pink; drain any excess fat.
  3. Stir in the chopped onion and minced garlic, sautéing for 3-4 minutes until softened and fragrant.
  4. Add the bell peppers, broccoli, and mushrooms; cook for 5-7 minutes, stirring occasionally, until tender-crisp.
  5. Pour in the undrained diced tomatoes and broth, then stir in Italian seasoning, salt, and pepper; bring to a gentle simmer.
  6. Reduce heat to medium-low, cover, and simmer for 8-10 minutes until vegetables are tender and flavors meld.
  7. Remove from heat, adjust seasonings to taste, and garnish with fresh parsley if desired before serving warm.

Notes

This recipe is highly adaptable. Feel free to swap in your favorite vegetables, such as zucchini, spinach, or green beans. For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning.
