  • 12 large eggs
  • 1/2 cup milk dairy, almond, or oat
  • 1 tbsp olive oil
  • 1 cup bell peppers any color
  • 1 cup spinach
  • 1/2 cup onion
  • 1/2 cup cooked diced turkey sausage or lean ham optional
  • 1/2 cup shredded low-fat cheddar cheese
  • Salt to taste
  • freshly ground black pepper to taste
  • 1 tbsp fresh chopped chives or parsley optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers and cook for 5-7 minutes until softened.
  3. Stir in the spinach and cook until wilted, about 2-3 minutes.
  4. If using, add cooked turkey sausage or ham and heat through, then remove from heat.
  5. In a large bowl, whisk the eggs and milk together until well combined, then season generously with salt and pepper.
Assembly and Baking
  1. Spread the sautéed vegetable mixture evenly on the bottom of the prepared baking dish.
  2. Sprinkle half of the shredded cheese over the vegetables, then pour the egg mixture over the vegetables and cheese.
  3. Top with the remaining cheese.
  4. Bake for 30-35 minutes, or until the casserole is set in the center and lightly golden brown on top.
Serving
  1. Let the casserole rest for 5-10 minutes before slicing and serving. Garnish with fresh herbs if desired.

Notes

This casserole can be prepared ahead of time and baked in the morning for a quick and nutritious breakfast. Individual portions also reheat well.
