  • 4 cups mixed vegetables broccoli florets, sliced carrots, bell peppers, green beans, snap peas, zucchini, etc., fresh or frozen
  • 1/4 cup chicken or vegetable broth optional, for moisture
  • Fresh parsley or cilantro chopped (for garnish, optional)

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat, then add ground turkey and cook, breaking it up, until browned and no longer pink; drain excess fat.
  2. Add chopped onion to the skillet and sauté for 3-4 minutes until softened, then stir in minced garlic, oregano, and basil for another minute until fragrant, seasoning with salt and pepper.
  3. While turkey cooks, prepare a steamer by adding water below the basket, place mixed vegetables in the basket, bring water to a boil, then steam until tender-crisp, about 5-8 minutes.
  4. Optionally, combine steamed vegetables with the ground turkey in the skillet, adding chicken or vegetable broth if desired for moisture, then gently toss to combine.
  5. Serve the ground turkey and vegetables, optionally garnishing with fresh parsley or cilantro.

Notes

This recipe is versatile; feel free to adjust the type of vegetables and herbs based on your preference. For a spicier kick, add a pinch of red pepper flakes with the garlic and herbs.
