Preparation
- Chop all vegetables, mince garlic and ginger, then whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, and cornstarch slurry in a small bowl to prepare the sauce.
Cooking
- Heat oil in a large skillet or wok over medium-high heat. Brown the ground turkey for 5-7 minutes until no pink remains, then drain excess grease and set aside.
- Add chopped onion to the skillet and cook for 2-3 minutes until softened. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
- Add harder vegetables like broccoli and carrots first, stir-frying for 3-4 minutes. Then add softer vegetables like bell peppers, snap peas, and mushrooms, and continue to stir-fry for 2-3 minutes until crisp-tender.
- Return the cooked turkey to the skillet, re-whisk the sauce, and pour it over the turkey and vegetables. Stir constantly for 1-2 minutes until the sauce thickens and coats everything.
Serving
- Serve the stir fry hot over cooked rice or noodles, garnished with sesame seeds and chopped green onions.
Notes
Adjust the amount of ginger or add a pinch of red pepper flakes for extra heat if desired. This stir-fry is also delicious with other protein sources like chicken or tofu.
