Preparation
- Cook and season ground beef or shred cooked chicken as needed. Warm cold black beans and rice.
- Prepare all desired fillings and have them ready for assembly.
Grilling
- Heat a large non-stick skillet or griddle over medium heat, then add a small amount of oil or butter, ensuring even coating.
- Place a flour tortilla in the hot pan and immediately sprinkle a generous layer of shredded cheese on one half, letting it melt and crisp for 1-2 minutes.
- Once the cheese has a crispy crust, spoon cooked meat, rice, beans, salsa, and sour cream onto the bare half of the tortilla, avoiding overfilling.
- Carefully fold the cheesy side of the tortilla over the fillings and gently press down with a spatula.
- Flip the burrito so the folded, cheesy side is face down and cook for 2-3 minutes, pressing occasionally, until golden brown and crispy. Repeat on the other side if desired.
- Remove from the pan, slice in half if desired, and serve immediately.
Notes
