  • 1 cup Shredded Cheese (Cheddar, Monterey Jack, Colby, or Mexican blend)
  • 0.5 cup Cooked Seasoned Ground Beef or Chicken
  • 0.25 cup Cooked Rice
  • 0.25 cup Canned Black Beans rinsed and drained
  • 2 tablespoons Salsa or Picante Sauce
  • 1 tablespoon Sour Cream or Greek Yogurt
  • 1 teaspoon Oil or Butter for grilling

Method
 

Preparation
  1. Cook and season ground beef or shred cooked chicken as needed. Warm cold black beans and rice.
  2. Prepare all desired fillings and have them ready for assembly.
Grilling
  1. Heat a large non-stick skillet or griddle over medium heat, then add a small amount of oil or butter, ensuring even coating.
  2. Place a flour tortilla in the hot pan and immediately sprinkle a generous layer of shredded cheese on one half, letting it melt and crisp for 1-2 minutes.
  3. Once the cheese has a crispy crust, spoon cooked meat, rice, beans, salsa, and sour cream onto the bare half of the tortilla, avoiding overfilling.
  4. Carefully fold the cheesy side of the tortilla over the fillings and gently press down with a spatula.
  5. Flip the burrito so the folded, cheesy side is face down and cook for 2-3 minutes, pressing occasionally, until golden brown and crispy. Repeat on the other side if desired.
  6. Remove from the pan, slice in half if desired, and serve immediately.

Notes

For extra flavor, consider seasoning your rice and beans. Adjust the amount of cheese to control the crispiness of the crust. Be careful not to overfill the burrito, as it will be difficult to fold and grill. You can also experiment with different types of cheese for varying flavors and textures.
