  • 2 lbs Potatoes Yukon Gold or red, scrubbed and cut into 1-inch chunks
  • 1/4 cup Extra Virgin Olive Oil
  • 2 medium Lemons juiced (about 1/4 cup total)
  • 1 Lemon thinly sliced
  • 4-5 cloves Garlic minced
  • 1 tablespoon Dried Oregano preferably Greek
  • 1 teaspoon Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 4 oz Feta Cheese crumbled

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and combine potatoes in a large bowl.
  2. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper for the marinade.
  3. Pour marinade over potatoes and toss to coat evenly.
  4. Transfer potatoes to a baking dish, spreading them in a single layer, and scatter lemon slices among them.
Cooking
  1. Roast for 30 minutes, then stir and roast for another 15-20 minutes until golden brown.
  2. Remove from oven, sprinkle with feta, and return to oven for 5-7 minutes until softened.
  3. Garnish with fresh parsley or extra oregano if desired, and serve immediately.

Notes

For extra flavor, choose Greek dried oregano. Adjust roasting time based on your oven and desired potato crispiness.
