Ingredients

Main Ingredients
  • 1 English Cucumber large or 2 smaller ones
  • 8 oz Feta Cheese block, packed in brine
  • Small Skewers 4-6 inches long, wooden or bamboo
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Kalamata Olives pitted

Equipment

  • Knife
  • Cutting board
  • Platter

Method

Preparation
  1. Wash the cucumber thoroughly, then slice it into rounds, about 1/2 to 3/4 inch thick.
  2. Carefully cut the feta into bite-sized cubes, roughly 1/2-inch to 3/4-inch.
  3. Halve the cherry tomatoes and ensure the Kalamata olives are pitted, preparing them for assembly.
Assembling the Skewers
  1. Thread the ingredients onto the small skewers in the following order: feta cube, Kalamata olive, cucumber slice, and cherry tomato, repeating for a classic Greek combination.
Serving
  1. Arrange the assembled skewers artfully on a platter and serve immediately for the best fresh taste.

Notes

For added flavor, you can drizzle a little olive oil and sprinkle some dried oregano over the skewers just before serving. These skewers are best enjoyed fresh, but you can prepare the ingredients a few hours in advance and assemble them closer to serving time to prevent the cucumber from getting soggy.
