  • 2 Tbsp Olive oil or avocado oil
  • 4 cloves Fresh garlic minced
  • 1 tsp Chili powder
  • ½ tsp Ground cumin
  • 2 Tbsp Lime juice
  • Salt & black pepper to taste
Bowl Ingredients
  • 2 cups Cauliflower rice or cooked brown rice or mixed greens
  • ½ cup Black beans rinsed & drained
  • ½ cup Corn kernels fresh or frozen
  • 1 cup Cherry tomatoes halved
  • 1 medium Avocado sliced
  • ¼ cup Red onion thinly sliced
  • 2 Tbsp Fresh cilantro chopped
  • ¼ cup Cotija cheese crumbled
Toppings & Sauces
  • ½ cup Salsa verde or pico de gallo
  • ¼ cup Greek yogurt or sour cream
  • Optional toppings jalapeño slices, lime wedges, hot sauce

Preparation
