  • 2 each Boneless, Skinless Chicken Breasts 6-8 oz each
  • 2 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 1/2 cup Grated Parmesan Cheese freshly grated
  • 1/4 cup Panko Breadcrumbs
  • 1 tbsp Fresh Parsley, chopped
  • Salt and Freshly Ground Black Pepper to taste
  • 1/4 tsp dried Italian seasoning Optional

Method
 

Preparation
  1. Pat the chicken breasts dry and pound them to an even 1/2-inch thickness between parchment paper. Season with salt and pepper.
  2. In a shallow dish, combine minced garlic, Parmesan cheese, panko breadcrumbs, and optional Italian seasoning; mix well.
Cooking
  1. Dredge each chicken breast in the Parmesan mixture, pressing gently to ensure an even coating.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the coated chicken for 3-4 minutes per side until golden brown.
  3. Finish cooking in a preheated oven at 375°F (190°C) for 8-12 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Alternatively, reduce heat to medium-low, cover, and cook for 5-8 minutes, flipping once, until the chicken is cooked through.
Serving
  1. Remove the chicken from the skillet and allow it to rest for 5 minutes before slicing. Garnish with fresh chopped parsley.

Notes

For extra flavor, you can marinate the chicken in a little olive oil and garlic powder before coating. Make sure not to overcrowd the pan when searing to ensure a crispy crust.
