  • 1 lb (≈ 450 g) Large raw shrimp (16-20 count, peeled & deveined)
  • 4 Tbsp (½ stick) Unsalted butter
  • 4 cloves Fresh garlic minced
  • 2 Tbsp Fresh lemon juice
  • 2 Tbsp Fresh parsley finely chopped
  • ½ tsp Smoked paprika
  • ½ tsp Salt
  • ¼ tsp Freshly ground black pepper
  • 8-10 Wooden skewers or metal skewers (soaked 30 min)
  • ½ cup total Optional veggies (bell pepper, cherry tomato, zucchini) cut into 1-inch chunks

Method
 

Instructions
  1. In a medium bowl, combine the minced garlic, fresh lemon juice, chopped parsley, smoked paprika, salt, and black pepper.
  2. Add the peeled and deveined shrimp to the bowl and toss to coat evenly with the garlic butter mixture. Marinate for 15-20 minutes at room temperature.
  3. If using wooden skewers, remember to soak them in water for at least 30 minutes to prevent burning.
  4. Preheat your grill or grill pan to medium-high heat. Thread the marinated shrimp onto the skewers, alternating with optional veggies if desired.
  5. Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp turn pink and opaque. Be careful not to overcook.
  6. Serve hot, garnished with extra fresh parsley and a lemon wedge if desired.

Notes

For extra flavor, you can brush the shrimp with a little extra melted garlic butter during grilling. Adjust seasoning to taste. These skewers pair well with rice, quinoa, or a fresh green salad.
