  • 1 ½ cups long-grain white rice
  • 3 cups water or low-sodium chicken broth
  • 2 tablespoons unsalted butter divided
  • 4 cloves garlic, minced
  • 1 lb (450 g) large shrimp, peeled and deveined fresh or thawed frozen
  • ½ teaspoon red-pepper flakes adjust to heat preference

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley or cilantro for garnish
  • Salt and freshly ground black pepper to taste

Method
 

Cooking
  1. Rinse rice under cold water until clear, then combine with water or broth and a pinch of salt in a saucepan.
  2. Bring to a boil, reduce heat, cover, and simmer for 15 minutes; then remove from heat and let sit for 5 minutes before fluffing.
  3. While the rice cooks, mince the garlic, zest the lemon, and juice it, then set these aside.
  4. In a large skillet, heat 1 tablespoon of butter over medium heat until melted and fragrant.

Notes

For extra flavor, consider toasting the rice slightly before adding water. Serve immediately for best taste and texture.
