Preparation
- Preheat your oven to 450-500°F (230-260°C) with a pizza stone or baking sheet inside.
- Slice all vegetables: red onion, bell peppers, zucchini, halve cherry tomatoes, and slice black olives.
Assemble Pizza
- Roll out the pizza dough on a floured surface and transfer to parchment paper or a floured pizza peel.
- Spread marinara sauce evenly over the dough, leaving a 1-inch border.
- Sprinkle 1 cup of mozzarella cheese over the sauce, then arrange the vegetables over the cheese.
- Sprinkle the remaining 1/2 cup of mozzarella cheese over the vegetables.
- Drizzle 1 tablespoon of olive oil over the toppings and crust, then season with salt and pepper.
Bake & Serve
- Carefully transfer the pizza to the preheated oven.
- Bake for 10-15 minutes, until the crust is golden, cheese is bubbly, and vegetables are tender with charred edges.
- Remove from the oven, let cool for a minute or two, then garnish with fresh basil if desired before slicing and serving.
Notes
For a crispier crust, ensure your oven and pizza stone/baking sheet are thoroughly preheated. Feel free to customize the vegetables based on what's in season or your preferences. A sprinkle of red pepper flakes can add a nice kick!
