  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour (90g)
  • 1/4 cup unsweetened cocoa powder (20g)
  • 1/2 teaspoon salt
For the Chewy Chocolate Chip Cookie Layer
  • 1/2 cup unsalted butter (113g), softened
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup light brown sugar (50g), packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour (150g)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (170g) (semi-sweet or milk chocolate)

Method
 

Preparation
  1. Preheat oven to 350°F (175°C); line a 9x13 inch baking pan with greased parchment paper, leaving an overhang.
Brownie Layer
  1. Melt butter and dark chocolate over simmering water or in the microwave; cool slightly after melting.
  2. Whisk granulated sugar into the cooled chocolate, then add eggs one by one and vanilla extract until glossy.
  3. Combine flour, cocoa powder, and salt in a separate bowl, then gradually mix into the wet ingredients until just combined; pour batter into the prepared pan.
Cookie Dough
  1. Cream softened butter, granulated sugar, and light brown sugar until light and fluffy; beat in egg and vanilla extract.
  2. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to wet ingredients and mix until just combined; stir in chocolate chips.
Assembly & Baking
  1. Drop spoonfuls of cookie dough evenly over the brownie batter and gently spread to cover.
  2. Bake for 30-35 minutes until edges are set and a toothpick inserted into the brownie comes out with moist crumbs.
Cooling
  1. Cool completely in the pan on a wire rack before lifting and cutting into squares for fudgy, neat results.
