  • 1.5 - 2 lbs Ripe Tomatoes (a mix of cherry, grape, Roma, or even larger heirloom varieties)
  • 1/4 cup Fresh Basil finely chopped
  • 2 tablespoons Fresh Parsley finely chopped (flat-leaf preferred)
  • 1 tablespoon Fresh Oregano or Thyme finely chopped (optional)
  • 2-3 cloves Garlic minced
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar or Balsamic Vinegar
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Freshly Ground Black Pepper or to taste

Method
 

Preparation
  1. Wash and cut larger tomatoes into bite-sized pieces; halve cherry or grape tomatoes. Place all prepared tomatoes in a medium mixing bowl.
  2. In a small bowl, combine the finely chopped fresh basil, parsley, optional oregano/thyme, and minced garlic.
Marinade
  1. Add extra virgin olive oil, red wine or balsamic vinegar, salt, and pepper to the herb and garlic mixture. Whisk thoroughly until well combined.
  2. Pour the marinade over the tomatoes in the mixing bowl and gently toss to ensure even coating.
Marinating and Serving
  1. Cover and refrigerate for at least 30 minutes, or 1-2 hours for best flavor; 15-20 minutes at room temperature is also acceptable if shorter on time.
  2. Before serving, gently stir the tomatoes and adjust salt or pepper as needed.

Notes

For an extra burst of flavor, try adding a pinch of red pepper flakes to the marinade. This dish is excellent as a side, in salads, or atop bruschetta. Adjust herb quantities to your preference, and always use the freshest ingredients for the best results.
