Preparation
- Wash and cut larger tomatoes into bite-sized pieces; halve cherry or grape tomatoes. Place all prepared tomatoes in a medium mixing bowl.
- In a small bowl, combine the finely chopped fresh basil, parsley, optional oregano/thyme, and minced garlic.
Marinade
- Add extra virgin olive oil, red wine or balsamic vinegar, salt, and pepper to the herb and garlic mixture. Whisk thoroughly until well combined.
- Pour the marinade over the tomatoes in the mixing bowl and gently toss to ensure even coating.
Marinating and Serving
- Cover and refrigerate for at least 30 minutes, or 1-2 hours for best flavor; 15-20 minutes at room temperature is also acceptable if shorter on time.
- Before serving, gently stir the tomatoes and adjust salt or pepper as needed.
Notes
For an extra burst of flavor, try adding a pinch of red pepper flakes to the marinade. This dish is excellent as a side, in salads, or atop bruschetta. Adjust herb quantities to your preference, and always use the freshest ingredients for the best results.
