Classic Few-Ingredient Breakfast Casserole

A family-friendly breakfast casserole made with minimal ingredients for a quick and easy morning meal. This dish is perfect for a weekend brunch or a satisfying weekday breakfast.

  • 8 large eggs
  • 1.5 cups milk whole or 2%
  • 6 slices day-old bread torn into 1-inch cubes
  • 1 cup cooked breakfast meat sausage, bacon, or ham, chopped (optional)
  • 1.5 cups shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Spread the torn bread cubes evenly over the bottom of the prepared baking dish.
  3. If using, sprinkle the cooked breakfast meat over the bread cubes, then evenly distribute ¾ cup of shredded cheddar cheese over the meat and bread.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  5. Carefully pour the egg mixture evenly over the bread, meat, and cheese, pressing down gently with a fork to ensure the bread soaks it up.
  6. Sprinkle the remaining ¾ cup of shredded cheddar cheese over the top of the casserole.
Baking
  1. Bake for 30-35 minutes, or until the casserole is set in the center and golden brown on top, and a knife inserted into the center comes out clean.
  2. Remove the casserole from the oven and let it rest for 5-10 minutes.
  3. Slice and serve warm.

Notes

For best results, allow the bread to soak in the egg mixture for at least 10-15 minutes before baking. You can also prepare this casserole the night before and refrigerate it, then bake it in the morning.
