  • 8 oz feta cheese packed in brine
  • 1 English cucumber
  • ½ cup Kalamata olives pitted
  • ¼ cup fresh mint leaves
  • 2 tablespoons extra virgin olive oil

Method
 

Preparation
  1. Pat the feta cheese dry and cut into 1-inch cubes. Wash and slice the English cucumber into ½-inch thick rounds, halving larger rounds.
  2. Ensure Kalamata olives are pitted and gently wash and pat dry the fresh mint leaves.
Assembly
  1. Layer ingredients onto small skewers, alternating cucumber, feta, an olive, and a mint leaf. Continue this pattern, leaving space at the ends, aiming for 2-3 pieces of each main ingredient per skewer.
Serving
  1. Arrange the assembled skewers on a platter, drizzle with olive oil, and serve immediately for best freshness and flavor.

Notes

These skewers are best enjoyed fresh. For a variation, add cherry tomatoes or sun-dried tomatoes to the skewers.
