  • 2 tablespoons Olive Oil
  • 3 cloves Garlic minced
  • 1 organic Lemon zested and juiced
  • 1 tablespoon Honey or Maple Syrup
  • 2 tablespoons Soy Sauce or Tamari for gluten-free
  • 0.25 cup chicken or vegetable Broth
  • 1 teaspoon Cornstarch optional, for thickening the sauce
  • 1 cup bite-sized broccoli florets or bell pepper strips Optional Veggies
  • Salt and freshly ground black pepper to taste (Seasoning)
  • Fresh parsley or cilantro chopped (Garnish)

Method
 

Instructions
  1. Pat the peeled and deveined shrimp very dry with paper towels to ensure better searing.
  2. In a medium bowl, whisk together the minced garlic, lemon zest, lemon juice, honey, soy sauce, and broth; optionally, whisk in cornstarch for a thicker sauce.
  3. Add shrimp to half of the sauce mixture (reserve the rest) and toss to coat, marinating for 5-10 minutes while preparing other ingredients.
  4. Heat olive oil in a large skillet over medium-high heat, then cook shrimp in a single layer for 1-2 minutes per side until pink and opaque; remove and set aside.
  5. If using, add broccoli or bell pepper to the same pan and sauté for 3-5 minutes until tender-crisp.
  6. Pour the reserved sauce into the pan and simmer, stirring frequently, for 2-3 minutes until slightly thickened or reduced.
  7. Return the cooked shrimp and any veggies to the pan, tossing gently to coat everything evenly.
  8. Adjust seasoning with salt and pepper as needed, then garnish with fresh parsley or cilantro and serve immediately.

Notes

For best results, do not overcrowd the pan when cooking shrimp; cook in batches if necessary. Adjust the amount of honey or soy sauce to your taste preferences. This dish pairs well with rice or noodles.
