Ingredients

Main Ingredients
  • 6-8 slices day-old bread, cubed sourdough, brioche, or sandwich bread
  • 1 pound cooked breakfast sausage, crumbled or diced cooked ham/bacon
  • 2 cups shredded cheddar cheese or a blend like Monterey Jack/Gruyère
  • 8 large eggs
  • 2 cups milk whole milk or 2%
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Optional Add-ins
  • Diced onions, bell peppers, mushrooms, or a handful of fresh spinach

Equipment

  • 9x13 inch casserole dish
  • large bowl
  • whisk
  • plastic wrap

Method

Preparation
  1. Lightly grease a 9x13 inch casserole dish and spread the cubed bread evenly across the bottom.
  2. Sprinkle the cooked breakfast meat over the bread cubes, followed by an even layer of shredded cheese.
Assembly
  1. In a large bowl, whisk together eggs, milk, dry mustard, salt, and pepper until well combined, then fold in any optional vegetables.
  2. Carefully pour the egg mixture over the bread, meat, and cheese, ensuring all bread cubes are submerged to soak up the mixture.
Chilling and Baking
  1. Cover the casserole tightly and refrigerate for at least 8 hours or overnight (up to 24 hours).
  2. Preheat the oven to 350°F (175°C), then remove the casserole and let it sit at room temperature for 20-30 minutes.
  3. Bake uncovered for 45-60 minutes until golden brown, puffed, and a knife inserted into the center comes out clean.
  4. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results, allow the casserole to chill overnight to fully absorb the egg mixture. You can customize this casserole with your favorite cheeses, meats, and vegetables. To ensure even baking, do not overfill your casserole dish. Adjust baking time as needed based on your oven and the depth of your casserole.
