  • 8-10 slices day-old white bread, sourdough, or brioche, cut into cubes
  • 8-10 large eggs
  • 1 ½ cups milk (dairy or non-dairy)
  • 1 lb cooked and crumbled sausage or bacon
  • 2 cups shredded cheddar cheese
Optional Add-ins
  • ½ cup chopped yellow onion
  • ½ cup chopped bell pepper (any color
Seasonings
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
For Greasing
  • 1 tablespoon softened butter

Method
 

Preparation
  1. Grease a 9x13 inch baking dish with softened butter.
  2. Arrange bread cubes evenly in the prepared baking dish.
  3. Sprinkle cooked sausage, onion, and bell pepper over the bread cubes.
  4. Scatter 1 ½ cups of shredded cheese over the layers, reserving the rest for later.
Mixing and Chilling
  1. Whisk eggs, milk, salt, pepper, and garlic powder in a large bowl until well combined.
  2. Pour the egg mixture over the ingredients in the baking dish, ensuring the bread is saturated.
  3. Cover and refrigerate for at least 4 hours, or preferably overnight.
Baking
  1. Preheat oven to 350°F (175°C) and remove the casserole from the refrigerator.
  2. Uncover and sprinkle the remaining ½ cup of shredded cheese over the top.
  3. Bake for 45-60 minutes, until set, golden brown, and a knife comes out clean.
  4. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For extra flavor, you can sauté the onions and bell peppers before adding them to the casserole. Feel free to customize with other cheeses or vegetables you enjoy. This casserole is also great for meal prepping; simply reheat individual portions in the microwave or oven.
