  • 1 pound ground turkey 93/7 lean
  • 1 tablespoon olive oil or sesame oil
  • small onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated (optional)
  • 4 cups mixed stir-fry vegetables broccoli florets, sliced carrots, bell peppers, snap peas
For the Sauce
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch or arrowroot powder
  • 1/2 teaspoon red pepper flakes optional
For Serving & Garnish
  • Cooked rice or noodles for serving
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Method
 

Cooking Instructions
  1. Heat olive or sesame oil in a large skillet or wok over medium-high heat. Add ground turkey, break it apart, and cook until browned, then drain excess fat.
  2. Push turkey to one side; add chopped onion, minced garlic, and grated ginger to the empty side and sauté for 1-2 minutes until fragrant.
  3. Stir turkey and aromatics together, then add mixed stir-fry vegetables. Cook for 3-5 minutes, stirring occasionally, until vegetables are crisp-tender.
  4. Whisk together soy sauce, honey, rice vinegar, cornstarch, and red pepper flakes in a small bowl until smooth.
  5. Pour the sauce over the turkey and vegetables, stirring constantly for 1-2 minutes until it thickens and coats everything.
  6. Remove from heat and serve immediately over cooked rice or noodles, garnished with sesame seeds and chopped green onions if desired.

Notes

Adjust red pepper flakes to your spice preference. If you don't have fresh ginger, you can use 1/2 teaspoon of ground ginger instead, but add it with the sauce ingredients rather than sautéing.
