Cooking Steps
- Heat a large skillet over medium-high heat, add olive oil, and cook the ground turkey for 5-7 minutes until browned, then drain excess fat.
- Push turkey aside, add diced onion and bell pepper, sauté for 3-5 minutes, then stir in minced garlic and cook for another minute until fragrant.
- Combine turkey and vegetables, add cumin, chili powder, paprika, salt, and black pepper, and cook for 1 minute, stirring constantly, to toast the spices.
- Pour in crushed tomatoes and broth, stirring well to combine.
- Simmer on low for 10-15 minutes, covered, to meld flavors and thicken the sauce.
- Stir in spinach or kale until wilted, adjust seasonings, and serve hot, optionally with shredded cheese.
Notes
For a spicier kick, add a pinch of red pepper flakes with the other spices.
