  • 1 lb 93/7 lean ground turkey
  • 1 medium yellow onion diced
  • 1 bell pepper (any color) diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 (14.5 oz) can crushed tomatoes
  • 1/2 cup chicken or vegetable broth
  • fresh spinach or kale Optional: A handful of

Cooking Steps
  1. Heat a large skillet over medium-high heat, add olive oil, and cook the ground turkey for 5-7 minutes until browned, then drain excess fat.
  2. Push turkey aside, add diced onion and bell pepper, sauté for 3-5 minutes, then stir in minced garlic and cook for another minute until fragrant.
  3. Combine turkey and vegetables, add cumin, chili powder, paprika, salt, and black pepper, and cook for 1 minute, stirring constantly, to toast the spices.
  4. Pour in crushed tomatoes and broth, stirring well to combine.
  5. Simmer on low for 10-15 minutes, covered, to meld flavors and thicken the sauce.
  6. Stir in spinach or kale until wilted, adjust seasonings, and serve hot, optionally with shredded cheese.

Notes

For a spicier kick, add a pinch of red pepper flakes with the other spices.
