- Heat olive oil in a large skillet over medium-high heat, then add chopped onion and cook for 3-4 minutes until softened.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add ground turkey to the skillet, breaking it apart, and cook until fully browned (5-7 minutes), then drain any excess fat.
- Stir in taco seasoning, diced tomatoes with green chilies (undrained), black beans, corn, and 1/2 cup water.
- Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes to meld flavors and thicken the sauce.
- While the turkey mixture simmers, cook your rice according to package directions.
- Prepare all desired toppings by chopping lettuce, shredding cheese, dicing avocado, and other garnishes.
- Divide the cooked rice among serving bowls.
- Spoon a generous amount of the turkey mixture over the rice and top with your favorite fixings like lettuce, salsa, sour cream, cheese, avocado, and fresh cilantro; serve immediately with lime wedges.
Notes
For a spicier kick, add a pinch of red pepper flakes with the taco seasoning. Store leftovers in an airtight container for up to 3 days. This recipe is also great for meal prepping!
