Preparation
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine chicken thighs with minced garlic, olive oil, optional lemon juice, oregano, thyme, paprika, salt, and pepper; toss to coat.
- If using, add quick-cooking vegetables to the bowl and toss to coat them lightly with the garlicky oil.
Baking & Serving
- Arrange the seasoned chicken and vegetables in a single layer on the prepared baking sheet for even cooking.
- Bake for 25-35 minutes, or until chicken reaches an internal temperature of 165°F (74°C); bone-in may need longer, and you can broil for crispy skin.
- Remove from oven and let the chicken rest for 5 minutes before serving to redistribute juices.
Notes
For best results, ensure the chicken and vegetables are spread in a single layer without overcrowding the baking sheet to allow for even roasting and browning.
