  • 2 tablespoons olive oil
  • 1/2 lemon lemon juiced (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika (smoked paprika recommended)
  • Salt to taste
  • Black pepper to taste
  • 1 pound quick-cooking vegetables (e.g., broccoli florets, asparagus spears, chopped bell peppers) (optional)

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine chicken thighs with minced garlic, olive oil, optional lemon juice, oregano, thyme, paprika, salt, and pepper; toss to coat.
  3. If using, add quick-cooking vegetables to the bowl and toss to coat them lightly with the garlicky oil.
Baking & Serving
  1. Arrange the seasoned chicken and vegetables in a single layer on the prepared baking sheet for even cooking.
  2. Bake for 25-35 minutes, or until chicken reaches an internal temperature of 165°F (74°C); bone-in may need longer, and you can broil for crispy skin.
  3. Remove from oven and let the chicken rest for 5 minutes before serving to redistribute juices.

Notes

For best results, ensure the chicken and vegetables are spread in a single layer without overcrowding the baking sheet to allow for even roasting and browning.
