  • 4 salmon fillets (about 6 ounces/170g each), skin on or off
  • 4 teaspoons extra virgin olive oil
  • 1 large lemon half sliced, half for serving
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1 cup asparagus spears trimmed

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare four 12-14 inch pieces of aluminum foil.
  2. Pat the salmon fillets dry with a paper towel and season both sides generously with salt and pepper.
Assemble Packets
  1. Place one salmon fillet in the center of each foil square, then drizzle with 1 teaspoon of olive oil.
  2. Divide minced garlic, fresh dill, and 1-2 lemon slices among the salmon pieces; arrange asparagus around the salmon if using.
Bake and Serve
  1. Seal the foil packets by folding the longer sides down tightly, then folding in the shorter sides to create a steam-circulating enclosure.
  2. Place packets on a baking sheet and bake for 12-18 minutes, or until the salmon flakes easily with a fork.
  3. Carefully open the packets, being mindful of steam, and serve the salmon with a fresh lemon wedge.

Notes

For best results, use fresh salmon. Adjust baking time based on the thickness of the fillet; thicker fillets may require a few extra minutes. Be cautious when opening the foil packets as the steam will be hot.
