Preparation
- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- Spread cubed bread or cooked potatoes evenly across the bottom of the prepared dish.
- Sprinkle cooked breakfast meat, diced onions, bell peppers, and spinach (if using) over the base layer.
- Sprinkle 1 cup of shredded cheese over the fillings.
- In a large bowl, whisk together eggs, milk, salt, pepper, and optional garlic/onion powder until well combined.
- Carefully pour the egg mixture over the ingredients in the baking dish, ensuring it seeps into all areas. Sprinkle the remaining 1/2 cup of cheese on top.
- Bake for 35-45 minutes, or until the casserole is set in the center and golden brown.
