  • 10-12 large eggs
  • 1/2 cup milk
  • 4-6 slices day-old bread, cubed or 2 cups cooked hash browns/diced potatoes
  • 1 cup cooked crumbled sausage or bacon bits/diced ham
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper any color
  • 1/4 cup chopped spinach optional
  • Salt and black pepper to taste
  • garlic powder or onion powder optional
  • Butter or cooking spray for greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. Spread cubed bread or cooked potatoes evenly across the bottom of the prepared dish.
  3. Sprinkle cooked breakfast meat, diced onions, bell peppers, and spinach (if using) over the base layer.
  4. Sprinkle 1 cup of shredded cheese over the fillings.
  5. In a large bowl, whisk together eggs, milk, salt, pepper, and optional garlic/onion powder until well combined.
  6. Carefully pour the egg mixture over the ingredients in the baking dish, ensuring it seeps into all areas. Sprinkle the remaining 1/2 cup of cheese on top.
  7. Bake for 35-45 minutes, or until the casserole is set in the center and golden brown.
  8. Remove from the oven and let it rest for 5-10 minutes before slicing and serving.
