  • 1 pound lean ground beef
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet, then add ground beef and cook until browned, draining excess grease.
  2. Add chopped onion to the skillet and cook until softened, then stir in minced garlic until fragrant.
  3. Stir in uncooked rice, diced tomatoes (undrained), beef broth, oregano, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Remove from heat and let sit, covered, for 5 minutes to allow rice to steam and become fluffy, then fluff with a fork.
  6. Garnish with fresh chopped parsley or shredded cheddar cheese if desired, and serve hot.

Notes

For best results, do not lift the lid while the rice is simmering to ensure even cooking and fluffy rice. Adjust seasonings to your personal preference.
