  • 1 teaspoon baking soda
  • .5 teaspoon salt
Wet Ingredients
  • .5 cup unsalted butter, melted
  • .75 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3-4 very ripe large bananas, mashed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing and flouring it or lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt; then set this mixture aside.
Mixing
  1. In a large bowl, thoroughly combine the mashed bananas, melted butter, granulated sugar, beaten eggs, and vanilla extract.
  2. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined without overmixing, as some lumps are acceptable.
Baking
  1. Pour the batter into the prepared loaf pan and spread it evenly.
  2. Bake for 50-65 minutes, or until a wooden skewer inserted into the center comes out clean; tent with foil if the top browns too quickly.
  3. Allow the loaf to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

For best results, make sure your bananas are very ripe with plenty of brown spots for maximum sweetness and moisture. This banana bread is delicious on its own or served with a pat of butter, cream cheese, or a sprinkle of cinnamon sugar on top. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
