  • 6 large eggs
  • 1 tablespoon olive oil or ghee
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 green chili deseeded and finely chopped (optional)
  • 1 large tomato diced
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon ground cumin
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh cilantro chopped (for garnish)

Method
 

Preparation
  1. Heat olive oil or ghee in a non-stick skillet over medium heat, then add chopped onion and cook until softened and translucent for 5-7 minutes.
  2. Stir in minced garlic and chopped green chili and cook for one minute; then add diced tomato, turmeric, and cumin, cooking for 5-7 minutes until tomatoes break down.
  3. Whisk eggs in a medium bowl with salt and pepper until just combined.
  4. Pour whisked eggs over the vegetable mixture, reduce heat to low, cover, and cook for 10-15 minutes until eggs are set; alternatively, finish under a broiler for 2-3 minutes.
  5. Slide the omelette onto a serving plate and garnish generously with fresh cilantro.

Notes

For extra flavor, you can add a pinch of cayenne pepper with the turmeric and cumin. Serve immediately with warm naan bread or crusty bread for a complete meal.
