Preparation
- Heat olive oil or ghee in a non-stick skillet over medium heat, then add chopped onion and cook until softened and translucent for 5-7 minutes.
- Stir in minced garlic and chopped green chili and cook for one minute; then add diced tomato, turmeric, and cumin, cooking for 5-7 minutes until tomatoes break down.
- Whisk eggs in a medium bowl with salt and pepper until just combined.
- Pour whisked eggs over the vegetable mixture, reduce heat to low, cover, and cook for 10-15 minutes until eggs are set; alternatively, finish under a broiler for 2-3 minutes.
- Slide the omelette onto a serving plate and garnish generously with fresh cilantro.
Notes
For extra flavor, you can add a pinch of cayenne pepper with the turmeric and cumin. Serve immediately with warm naan bread or crusty bread for a complete meal.
