Classic Crockpot Taco Soup

This easy Crockpot Taco Soup recipe is packed with flavor and perfect for a cozy meal. Simply brown your meat, add all ingredients to your slow cooker, and let it simmer to perfection.

Ingredients

  • 1 pound Ground Beef (or ground turkey, chicken, or a plant-based alternative)
  • 1 medium Onion chopped
  • 2-3 cloves Garlic minced
  • 1 15-ounce can Canned Diced Tomatoes, undrained
  • 1 15-ounce can Canned Black Beans, rinsed and drained
  • 1 15-ounce can Canned Kidney Beans, rinsed and drained
  • 1 15-ounce can Canned Corn, drained (or 1 ½ cups frozen corn)
  • 1 4-ounce can Green Chilies, diced, undrained
  • 4 cups Beef Broth (or vegetable broth)
  • 1 1-ounce packet Taco Seasoning (or 2 tablespoons homemade)
  • 1 1-ounce packet Ranch Seasoning Mix (the dry mix, not dressing)

Preparation
  1. In a large skillet, brown the ground beef (or chosen protein) with chopped onion over medium-high heat, then drain any excess grease. Afterward, add minced garlic and cook for one additional minute until it becomes fragrant.
Cooking
  1. Transfer the cooked beef, onion, and garlic mixture to your slow cooker. Add all remaining ingredients: diced tomatoes, black beans, kidney beans, corn, diced green chilies, beef broth, taco seasoning, and dry ranch seasoning mix. Stir everything thoroughly to combine well. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the flavors have melded and the soup is heated through.
Serving
  1. Ladle hot soup into bowls and serve with your favorite toppings.

Notes

For extra flavor, consider adding a bay leaf to the crockpot while cooking and remove before serving. You can also customize your toppings with sour cream, shredded cheese, chopped cilantro, or crushed tortilla chips.
