Preparation
- In a large skillet, brown the ground beef (or chosen protein) with chopped onion over medium-high heat, then drain any excess grease. Afterward, add minced garlic and cook for one additional minute until it becomes fragrant.
Cooking
- Transfer the cooked beef, onion, and garlic mixture to your slow cooker. Add all remaining ingredients: diced tomatoes, black beans, kidney beans, corn, diced green chilies, beef broth, taco seasoning, and dry ranch seasoning mix. Stir everything thoroughly to combine well. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the flavors have melded and the soup is heated through.
Serving
- Ladle hot soup into bowls and serve with your favorite toppings.
Notes
For extra flavor, consider adding a bay leaf to the crockpot while cooking and remove before serving. You can also customize your toppings with sour cream, shredded cheese, chopped cilantro, or crushed tortilla chips.
