Preparation
- Pat the chicken dry with paper towels; if using breasts, you can leave them whole or cut them in half.
- In a small bowl, whisk together the lemon zest, lemon juice, minced garlic, olive oil, dried oregano, dried thyme, salt, and black pepper.
Cooking
- Place the chicken in the slow cooker and pour the lemon herb mixture over it, ensuring each piece is well coated.
- Pour the chicken broth around the chicken in the slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and shreds easily.
Serving
- Once cooked, you can remove and shred the chicken with two forks, then stir it back into the flavorful broth before serving.
- Garnish with fresh parsley if desired, and serve hot.
Notes
For extra flavor, you can sear the chicken in a hot pan for a few minutes per side before adding it to the slow cooker to brown it slightly.
