  • 2 lbs Boneless, Skinless Chicken Thighs or Breasts
  • 1 Lemon zest and juice
  • 3-4 Garlic minced
  • 2 tbsp Olive Oil
  • 1 tbsp Dried Oregano or 3 tbsp fresh
  • 1 tbsp Dried Thyme or 3 tbsp fresh
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Chicken Broth
  • Fresh Parsley for garnish, optional

Method
 

Preparation
  1. Pat the chicken dry with paper towels; if using breasts, you can leave them whole or cut them in half.
  2. In a small bowl, whisk together the lemon zest, lemon juice, minced garlic, olive oil, dried oregano, dried thyme, salt, and black pepper.
Cooking
  1. Place the chicken in the slow cooker and pour the lemon herb mixture over it, ensuring each piece is well coated.
  2. Pour the chicken broth around the chicken in the slow cooker.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and shreds easily.
Serving
  1. Once cooked, you can remove and shred the chicken with two forks, then stir it back into the flavorful broth before serving.
  2. Garnish with fresh parsley if desired, and serve hot.

Notes

For extra flavor, you can sear the chicken in a hot pan for a few minutes per side before adding it to the slow cooker to brown it slightly.
