Classic Crockpot Garlic Parmesan Chicken Pasta

Instructions
  1. Place chicken breasts or thighs in a 6-quart slow cooker and add cream of chicken soup, softened cream cheese, chicken broth, minced garlic, Italian seasoning, onion powder, and black pepper.
  2. Stir gently to combine the ingredients; it's okay if the cream cheese isn't fully mixed yet.
  3. Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is cooked through and easy to shred.
  4. Remove and shred the chicken with two forks, then return it to the slow cooker and stir until the cream cheese is fully melted into a creamy sauce.
  5. Stir in the uncooked penne or rotini pasta, making sure it is mostly submerged in the sauce.
  6. Recover and continue cooking on HIGH for 20-30 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  7. Stir in ½ cup of grated Parmesan cheese until it melts and the sauce is smooth.
  8. Serve immediately, garnished with extra Parmesan cheese and fresh parsley, if desired.
