Preparation
- Cut chicken into 1-inch pieces.
- Whisk together broth, soups, milk, seasonings, salt, and pepper in a bowl until smooth.
Cooking
- Place chopped chicken at the bottom of the slow cooker, then sprinkle rice evenly over it.
- Pour the soup mixture over the chicken and rice; do not stir.
- Cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is cooked and rice is tender.
Serving
- Stir well once cooked. Add optional frozen peas or mixed vegetables in the last 30 minutes, and stir in shredded cheese just before serving until melted. Let stand briefly to thicken before serving warm.
