  • 1.5 - 2 lbs boneless, skinless chicken breasts or thighs cut into 1-inch pieces
  • 1.5 cups uncooked white rice long-grain or Basmati work well
  • 3 cups low-sodium chicken broth
  • 1 can cream of chicken soup 10.5 oz
  • 1 can cream of mushroom soup 10.5 oz
  • 0.5 cup milk or half-and-half for extra creaminess
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley for color and flavor
  • Salt and Black Pepper To taste
Optional Add-ins
  • 1 cup frozen peas or mixed vegetables added in the last 30 minutes
  • 0.5 cup shredded cheddar cheese stirred in at the end

Method
 

Preparation
  1. Cut chicken into 1-inch pieces.
  2. Whisk together broth, soups, milk, seasonings, salt, and pepper in a bowl until smooth.
Cooking
  1. Place chopped chicken at the bottom of the slow cooker, then sprinkle rice evenly over it.
  2. Pour the soup mixture over the chicken and rice; do not stir.
  3. Cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is cooked and rice is tender.
Serving
  1. Stir well once cooked. Add optional frozen peas or mixed vegetables in the last 30 minutes, and stir in shredded cheese just before serving until melted. Let stand briefly to thicken before serving warm.
