  • lbs boneless, skinless chicken thighs cut into 1-inch cubes
  • 2 cups baby potatoes quartered
  • 2 carrots sliced diagonally
  • large onion diced
  • 3 cloves garlic minced
  • 2 cups low-sodium chicken broth
  • ½ cup white wine optional
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • Salt to taste
  • 2 tbsp all-purpose flour or cornstarch
  • 2 tbsp olive oil for browning
Garnish (Optional)
  • fresh parsley chopped

Preparation
  1. Drizzle olive oil into a large pan and heat over medium-high heat.

Notes

For a thicker stew, you can create a slurry with a little water and cornstarch, then stir it into the stew during the last 30 minutes of cooking.
