  • 2 tablespoons Olive oil
  • 1-1.5 teaspoons Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika smoked or sweet
  • 1 teaspoon Dried oregano or thyme

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
  2. Thoroughly pat the chicken thighs dry with paper towels to remove all moisture from both sides.
Seasoning & Roasting
  1. In a small bowl, combine olive oil, kosher salt, black pepper, garlic powder, paprika, and dried herbs.
  2. Rub this mixture all over the chicken thighs, ensuring they are well coated, then place them skin-side up on the prepared baking sheet with space between each thigh.
  3. Roast for 35-45 minutes, or until the internal temperature reaches 175°F (80°C) and the skin is golden brown and crispy.
Resting
  1. Once cooked, remove the chicken from the oven and let it rest for 5-10 minutes to allow the juices to redistribute before serving.

Notes

For extra crispy skin, ensure the chicken is very dry before seasoning. Resting the chicken after roasting is crucial for tenderness.
