Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper, foil, or a wire rack for optimal crispiness.
- Pat the chicken thighs very dry with paper towels to remove all excess moisture.
- In a small bowl, combine salt, black pepper, garlic powder, and paprika; then drizzle olive oil over the chicken thighs and rub the seasoning mixture evenly onto both sides, pressing it gently into the skin.
Cooking
- Place the seasoned chicken thighs skin-side up on the prepared baking sheet, ensuring there is space between each piece.
- Bake for 20 minutes at 400°F (200°C).
- Reduce oven temperature to 375°F (190°C) and continue baking for 20-30 minutes more, until the internal temperature reaches 175°F (80°C) and the skin is deeply golden brown and crispy.
Serving
- Remove the chicken from the oven and let it rest on the baking sheet for 5-10 minutes before serving.
Notes
For extra crispy skin, ensure the chicken is very dry before seasoning. Letting the chicken rest after baking helps the juices redistribute, keeping it tender and moist.
