  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4-5 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1.5 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • 1 tsp Italian seasoning or dried oregano Optional

Method

  1. Pat the chicken pieces dry with paper towels and season generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat, then sear chicken in batches for 3-4 minutes per side until golden brown and cooked through; remove and set aside.
  3. Reduce heat to medium, add butter to the same skillet, and sauté minced garlic for 1-2 minutes until fragrant, being careful not to burn it.
  4. Pour in chicken broth to deglaze the pan, simmer for a minute, then stir in heavy cream.
  5. Bring the cream mixture to a gentle simmer, gradually stir in Parmesan cheese until melted, and add Italian seasoning or oregano if using.
  6. Return the cooked chicken to the skillet, toss to coat in the sauce, and simmer for 2-3 minutes to meld flavors and warm through.
  7. Taste and adjust seasoning, then garnish with fresh parsley and additional Parmesan cheese before serving.

Notes

You can serve this chicken dish over pasta, rice, or with a side of steamed vegetables. For a spicier kick, add a pinch of red pepper flakes with the garlic.
