- Pat the chicken pieces dry with paper towels and season generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat, then sear chicken in batches for 3-4 minutes per side until golden brown and cooked through; remove and set aside.
- Reduce heat to medium, add butter to the same skillet, and sauté minced garlic for 1-2 minutes until fragrant, being careful not to burn it.
- Pour in chicken broth to deglaze the pan, simmer for a minute, then stir in heavy cream.
- Bring the cream mixture to a gentle simmer, gradually stir in Parmesan cheese until melted, and add Italian seasoning or oregano if using.
- Return the cooked chicken to the skillet, toss to coat in the sauce, and simmer for 2-3 minutes to meld flavors and warm through.
- Taste and adjust seasoning, then garnish with fresh parsley and additional Parmesan cheese before serving.
Notes
You can serve this chicken dish over pasta, rice, or with a side of steamed vegetables. For a spicier kick, add a pinch of red pepper flakes with the garlic.
