  • 24 medium Cremini Mushrooms baby bella
  • 8 ounces cream cheese softened
  • 3-4 cloves garlic minced
  • 1/4 cup fresh parsley finely chopped
  • 2 tablespoons fresh chives finely chopped
  • 1/4 cup Parmesan cheese grated, plus extra for topping
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Method
 

Preparation
  1. Clean mushrooms, remove stems, and chop stems finely. Toss mushroom caps with olive oil, salt, and pepper, then arrange gill-side up on a parchment-lined baking sheet.
  2. Combine softened cream cheese, minced garlic, chopped parsley, chives, 1/4 cup Parmesan, and mushroom stems in a bowl, seasoning with salt and pepper until creamy.
Cooking
  1. Spoon the cream cheese mixture generously into each mushroom cap.
  2. Preheat oven to 375°F (190°C) and bake filled mushrooms for 18-22 minutes until tender, bubbly, and lightly golden.
  3. Remove from oven, sprinkle with extra Parmesan if desired, and serve warm.

Notes

For an extra touch of flavor, consider adding a pinch of red pepper flakes to the filling for a subtle heat. Be sure to not overcrowd the baking sheet to ensure even cooking and browning of the mushrooms.
