- Clean mushrooms, remove stems, and chop stems finely. Toss mushroom caps with olive oil, salt, and pepper, then arrange gill-side up on a parchment-lined baking sheet.
- Combine softened cream cheese, minced garlic, chopped parsley, chives, 1/4 cup Parmesan, and mushroom stems in a bowl, seasoning with salt and pepper until creamy.
Cooking
- Spoon the cream cheese mixture generously into each mushroom cap.
- Preheat oven to 375°F (190°C) and bake filled mushrooms for 18-22 minutes until tender, bubbly, and lightly golden.
- Remove from oven, sprinkle with extra Parmesan if desired, and serve warm.
Notes
For an extra touch of flavor, consider adding a pinch of red pepper flakes to the filling for a subtle heat. Be sure to not overcrowd the baking sheet to ensure even cooking and browning of the mushrooms.
