Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- In a medium bowl, toss the chicken pieces with onion powder, garlic powder, paprika, salt, and pepper until well coated.
Assembly and Baking
- Spread the uncooked rice evenly in the bottom of the prepared baking dish.
- In a separate bowl, whisk together the cream of mushroom soup and chicken broth until smooth, then pour this mixture evenly over the rice.
- Arrange the seasoned chicken pieces over the liquid and rice, then cover the baking dish tightly with aluminum foil and bake for 45 minutes.
- Carefully remove the foil, stir in the frozen peas if using, and return to the oven uncovered for another 10-15 minutes until the rice is tender and chicken is cooked through.
- Let the dish rest for 5 minutes before serving.
Notes
For extra flavor, you can sauté the chicken briefly before adding it to the baking dish. Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
