  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1.5 cups uncooked long-grain white rice
  • 1 can cream of mushroom soup 10.5 oz
  • 1.5 cups chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • Salt to taste
  • Black pepper to taste
  • 0.5 cup frozen peas optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a medium bowl, toss the chicken pieces with onion powder, garlic powder, paprika, salt, and pepper until well coated.
Assembly and Baking
  1. Spread the uncooked rice evenly in the bottom of the prepared baking dish.
  2. In a separate bowl, whisk together the cream of mushroom soup and chicken broth until smooth, then pour this mixture evenly over the rice.
  3. Arrange the seasoned chicken pieces over the liquid and rice, then cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  4. Carefully remove the foil, stir in the frozen peas if using, and return to the oven uncovered for another 10-15 minutes until the rice is tender and chicken is cooked through.
  5. Let the dish rest for 5 minutes before serving.

Notes

For extra flavor, you can sauté the chicken briefly before adding it to the baking dish. Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
