Ingredients
  

Main
  • 1 lb Large shrimp, peeled & deveined
  • ½ cup Fresh or frozen cranberry sauce
  • 2 Tbsp Balsamic vinegar
  • 2 Tbsp Honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 clove Fresh garlic, minced
  • ¼ tsp Crushed red pepper flakes
  • 1 Tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Freshly ground black pepper
  • 2 Tbsp Fresh cilantro or parsley, chopped Optional garnish
  • 1 lime, cut into wedges
  • 8–10 Skewers
  • ½ cup Optional vegetables for threading

Method
 

Preparation
  1. Thaw shrimp if frozen and pat dry.
  2. Prepare the glaze by whisking together cranberry sauce, balsamic vinegar, honey, Dijon mustard, minced garlic, and red pepper flakes.
Assembly and Cooking
  1. Thread shrimp onto skewers, optionally alternating with vegetables.
  2. Brush generously with olive oil and season with salt and pepper.
  3. Grill or pan-fry skewers for 2-3 minutes per side until shrimp are pink and cooked through.
  4. Brush with cranberry glaze during the last minute of cooking.
Serving
  1. Garnish with fresh cilantro or parsley and serve with lime wedges.

Notes

For extra flavor, marinate the shrimp in a small amount of the glaze for 15 minutes before cooking. Adjust the amount of red pepper flakes to your spice preference.
