Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Gently unfold the thawed puff pastry onto a lightly floured surface; if using crescent roll dough, unroll and press seams together to form a rectangle.
- Cut the dough into 24 equal squares (about 2x2 inches each) using a sharp knife or pizza cutter.
Assembly
- Place one dough square into each cavity of a mini muffin pan or arrange on the baking sheet, then place one cube of Brie cheese in the center of each.
- Top each piece of Brie with about ½ teaspoon of cranberry sauce.
- For puff pastry, gently pinch the corners over the filling; for crescent roll dough, a gentle fold works well, or bake open-faced.
Baking and Finishing
- Bake for 12-15 minutes, or until the pastry is golden brown and puffed, and the cheese is bubbly and melted.
- Carefully remove from the oven and, if desired, garnish with fresh rosemary or chopped pecans immediately after baking.
- Let them cool slightly on the baking sheet for a few minutes before transferring to a serving platter.

These bites are best served warm. You can prepare them ahead of time and bake just before serving for optimal freshness and texture.
