Chili Preparation
- Preheat oven to 375°F (190°C). Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add ground beef, cook until no pink remains, and drain excess grease. Add chopped onion and sauté for 3-5 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant. Pour in diced tomatoes, kidney beans, and tomato sauce.
- Stir in chili seasoning mix, cumin, salt, and black pepper. Bring to a simmer, then reduce heat and cook for 10-15 minutes to meld flavors.
Casserole Assembly & Baking
- Transfer chili mixture to a 9x13 inch baking dish and spread evenly. Sprinkle 1 ½ cups of shredded cheese over the chili.
- Arrange frozen tater tots in a single layer over the cheese. Sprinkle the remaining ½ cup of shredded cheese over the tater tots.
- Bake for 30-35 minutes until tater tots are golden brown and crispy, and cheese is bubbly and melted.
- Let the casserole rest for 5-10 minutes before serving to set.
Notes
For an extra kick, add a pinch of cayenne pepper to the chili mixture. This casserole is great for meal prepping and can be reheated easily. Serve with a side of sour cream and green onions for garnish, if desired.
