  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onion
  • 1/2 cup cooked and crumbled lean turkey sausage or chicken sausage optional
  • 1/4 cup shredded cheese (cheddar, mozzarella, or dairy-free alternative) optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil or avocado oil

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet, then add onion and bell peppers and cook for 5-7 minutes until softened. Stir in spinach until wilted, and add sausage if using, then remove from heat.
  3. In a large bowl, whisk together eggs, almond milk, salt, pepper, and garlic powder until well combined and frothy.
Assembly and Baking
  1. Spread the sautéed vegetable and sausage mixture evenly in the prepared baking dish, and sprinkle with cheese if desired.
  2. Pour the egg mixture over the vegetables and cheese, ensuring even coating.
  3. Bake for 30-40 minutes until set and lightly golden brown, and a knife inserted into the center comes out clean.
  4. Remove from oven and let rest for 5-10 minutes before slicing and serving.

Notes

For meal prep, you can cook the vegetables and sausage ahead of time. This casserole reheats well and is great for breakfast throughout the week.
