Assemble the Bites
- Place the dough between parchment paper and roll it into a 1/4-inch thick rectangle.
- Evenly spread the cinnamon filling paste over the dough, leaving a small border.
- Carefully roll the dough tightly from one longer side, creating a log, then gently press the seam to seal.
Chill
- Place the log in the freezer for 10-15 minutes to firm up, making it easier to slice.
Slice into Bites
- Remove the log from the freezer and slice it into 1/2 to 3/4-inch thick rounds using a sharp knife.

- In a small bowl, whisk together powdered erythritol, milk, and vanilla extract until a smooth, pourable glaze forms.
