Ingredients
  

Steak
  • 1 lb sirloin steak, flank steak, or flat iron steak thinly sliced against the grain
Marinade
  • 1/4 cup fresh lime juice about 2-3 limes
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
Bowl Components
  • 1 cup cooked brown rice
  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn fresh or frozen
  • 1/4 red onion thinly sliced
Optional Toppings
  • avocado
  • salsa
  • Greek yogurt or light sour cream

Method
 

Marinate the Steak
  1. Combine lime juice, cilantro, minced garlic, olive oil, chili powder, cumin, salt, and pepper in a medium bowl. Add the sliced steak, coat well, cover, and refrigerate for 30 minutes to 2 hours.
Cook the Steak
  1. Heat a large skillet or grill pan over medium-high heat. Cook marinated steak in a single layer for 2-3 minutes per side until desired doneness. Remove and let rest.
Prepare Bowl Components
  1. Cook brown rice according to package directions, if not already cooked. Rinse and drain black beans, warm frozen corn, and thinly slice the red onion.
Assemble Your Bowls
  1. Start with a base of cooked brown rice, then arrange the cooked steak, black beans, corn, and red onion on top.
Garnish and Serve
  1. Add optional toppings like avocado, salsa, or Greek yogurt. Serve immediately and enjoy!

Notes

For best flavor, marinate the steak for the full 2 hours. Adjust spice levels to your preference. Leftovers can be stored in an airtight container for up to 3 days.
