Classic Chickpea Greek Salad Bowl with Lemon-Oregano Dressing

Ingredients
  

For the Salad:
  • 1 can chickpeas rinsed and drained (or about 1 ½ cups cooked chickpeas)
  • large cucumber deseeded and diced
  • 2-3 ripe Roma tomatoes diced
  • ½ red onion thinly sliced
  • ½ cup Kalamata olives pitted and halved
  • ¼ cup crumbled feta cheese (omit for vegan)
  • ½ cup chopped fresh parsley
For the Lemon Oregano Dressing:
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • ½ clove garlic minced (or ¼ teaspoon garlic powder)
  • ¼ teaspoon salt or to taste
  • teaspoon black pepper or to taste

Method
 

Prepare the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper until well combined. Set aside.
Chop the Veggies
  1. Dice the cucumber and tomatoes, thinly slice the red onion, and halve the pitted Kalamata olives. Chop the fresh parsley.
Combine Salad Ingredients
  1. In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, diced tomatoes, sliced red onion, Kalamata olives, and chopped fresh parsley.
Add Feta
  1. Gently fold in the crumbled feta cheese, if you are using it.
Dress the Salad
  1. Pour the prepared lemon-oregano dressing over the salad ingredients.
Toss and Serve
  1. Toss everything gently until all the ingredients are well coated with the dressing. Serve immediately and enjoy!

Notes

For a heartier meal, add grilled chicken or fish. Adjust salt and pepper to taste, and feel free to add other favorite Mediterranean vegetables like bell peppers or artichoke hearts.
