Prepare the Dressing
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper until well combined. Set aside.
Chop the Veggies
- Dice the cucumber and tomatoes, thinly slice the red onion, and halve the pitted Kalamata olives. Chop the fresh parsley.
Combine Salad Ingredients
- In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, diced tomatoes, sliced red onion, Kalamata olives, and chopped fresh parsley.
Add Feta
- Gently fold in the crumbled feta cheese, if you are using it.
Dress the Salad
- Pour the prepared lemon-oregano dressing over the salad ingredients.
Toss and Serve
- Toss everything gently until all the ingredients are well coated with the dressing. Serve immediately and enjoy!
Notes
For a heartier meal, add grilled chicken or fish. Adjust salt and pepper to taste, and feel free to add other favorite Mediterranean vegetables like bell peppers or artichoke hearts.
