Marinade & Prep
- Combine olive oil, jerk seasoning, lime juice, minced garlic, and salt in a bowl and whisk well. Add the shrimp to the marinade, tossing to ensure each piece is fully coated.
- Allow the shrimp to marinate for at least 15-20 minutes at room temperature, or refrigerate for up to 30 minutes for deeper flavor. While marinating, prepare your grill or a grill pan for medium-high heat.
Cook & Assemble
- Grill the marinated shrimp for 2-3 minutes per side, until pink and opaque. Do not overcook, as shrimp cooks quickly and can become rubbery.
- Warm the tortillas according to package directions. Assemble the wraps by adding grilled shrimp, mango salsa, sliced avocado, red cabbage, and fresh cilantro; drizzle with Greek yogurt or sour cream before serving.
Notes
For extra spice, add a pinch of cayenne pepper to the marinade. These wraps are also excellent served as a salad by skipping the tortillas and serving over a bed of mixed greens. Remember to not overcook the shrimp to keep them tender.
