Classic Cajun Shrimp and Salmon with Garlic Cream Sauce

  • 2 Salmon fillets (about 6oz each, skin on or off)
  • 1 Large shrimp (peeled and deveined, tail-on or off)
  • Cajun seasoning (your favorite blend)
Sauce Ingredients
  • Olive oil or butter (for searing)
  • 4 cloves Garlic (plenty of minced fresh garlic)
  • 0.5 cup Heavy cream
  • 0.25 cup Chicken or vegetable broth
  • 0.5 cup Parmesan cheese (freshly grated)
Garnish & Optional
  • Fresh parsley or chives (for garnish)
  • Lemon (for a squeeze)
  • Cayenne pepper or hot sauce (optional a pinch or a dash)

Method
 

Cooking Steps
  1. Pat the salmon fillets and shrimp dry with paper towels, then season generously with Cajun seasoning.
  2. Heat oil or butter in a large skillet over medium-high heat, sear salmon skin-side down for 4-6 minutes per side, then remove and set aside.
  3. Add more oil if needed, then cook shrimp for 2-3 minutes per side until pink, remove and set aside.
  4. Reduce heat to medium, sauté minced garlic for 1 minute until fragrant, then pour in heavy cream and broth, scraping up browned bits, and bring to a simmer.
  5. Stir in grated Parmesan until melted and the sauce thickens; optionally add cayenne or hot sauce for heat.
  6. Return cooked shrimp to the sauce and toss to coat; serve salmon with the garlic cream shrimp mixture spooned over top, garnished with parsley or chives and a squeeze of lemon juice.

Notes

Ensure your salmon is cooked to your preferred doneness; you can always adjust cooking times. For a spicier kick, don't hesitate to add extra cayenne pepper or a dash of hot sauce to the cream sauce.
