  • 1 lb Large raw shrimp, peeled & deveined Use 21- or 25-count; for budget, buy frozen and thaw
  • 1 cup Sweet corn kernels fresh or frozen; if using canned, drain and rinse
  • 4 Tbsp Unsalted butter ½ stick; for dairy-free, swap with clarified butter or plant-based butter
  • 4 cloves Garlic, minced About 1 tsp; can substitute with ½ tsp garlic powder (less aromatic)
  • 2 tsp Cajun seasoning Homemade blend: paprika, cayenne, garlic powder, onion powder, thyme, oregano, black pepper
  • 1 Tbsp Olive oil Helps sear the corn; can omit if using enough butter
  • 1 Tbsp Fresh lemon, juiced Adds brightness; lime works for a Mexican twist
  • 2 Tbsp Fresh parsley, chopped Optional garnish; cilantro offers a different flavor profile
  • Salt to taste; adjust based on butter and Cajun seasoning salt content
  • Black pepper A pinch; freshly cracked for best flavor

Method
 

Cooking Instructions
  1. Pat the shrimp dry with paper towels and set aside. In a small bowl, combine the minced garlic and Cajun seasoning.
  2. Melt olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the corn and cook for 3-5 minutes, allowing it to char slightly.
  3. Push the corn to one side of the skillet and add the remaining 2 tablespoons of butter. Once melted, add the seasoned shrimp to the other side.
  4. Cook the shrimp for 1-2 minutes per side until pink and opaque.
  5. Remove the skillet from the heat, stir in the lemon juice and fresh parsley. Season with salt and pepper to taste before serving immediately.

Notes

For an extra kick, add a pinch of red pepper flakes with the Cajun seasoning. Serve this dish over rice, pasta, or with crusty bread to soak up the delicious sauce.
