  • 1.5 lbs fresh Roma tomatoes finely diced
  • 2-3 fresh garlic minced
  • 1/2 cup fresh basil finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic glaze plus more for drizzling
  • Salt to taste
  • Freshly ground black pepper to taste

  • 8 oz cream cheese softened, OR 1 cup whole milk ricotta cheese (optional, for creamy base)
  • Crusty bread or crostini for serving

Method
 

Bruschetta Preparation
  1. In a medium bowl, combine the finely diced Roma tomatoes, minced fresh garlic, and chopped fresh basil.
  2. Pour olive oil and balsamic glaze over the mixture, then gently toss to combine. Season with salt and pepper to taste.
  3. Cover and let the mixture sit at room temperature for at least 15-20 minutes to allow the flavors to meld.
Serving
  1. If using the optional creamy base, spread softened cream cheese or dollop ricotta evenly in a shallow serving dish.
  2. Spoon the tomato bruschetta mixture over the creamy base.
  3. Drizzle extra balsamic glaze over the top for an appealing finish.
  4. Serve immediately with crusty bread, crostini, or crackers for dipping.

Notes

For an even richer flavor, you can roast the garlic before mincing. Adjust the amount of balsamic glaze to your preference for a sweeter or tarter taste.
